After many months of tasting my husband has decided the best way of serving is the simplest, Frutta Cotta with thick Cumbrian Cream. However, Ewes milk ice cream is also delicious!
My younger son decided in the summer that Frutta Cotta was best spooned out of the jar onto barbecued Cumbrian sausages and washed down with lager or beer.
My Mum grills a lamb chop & accompanies it with Frutta Cotta for a super Sunday lunch.
Canapes of oatcakes with a spoon of duck pate topped by a piece of Frutta Cotta, developed at the Scottish International Food Fair Jan 2006.
Buy some brandy baskets and put a coulple of pieces of Frutta Cotta in each basket, cover with whipped cream, a scoop of ice cream or a spoonful of greek yoghurt. Decorate the top with a piece of fruit and a drizzle of Frutta Cotta juice. This is the ultimate ready in a minute, gourmet pud which gets even better as the brandy baskets get soft and juicy.
A neighbour swears by his morning pin-head oatmeal porridge accompanied by a generous helping of Frutta Cotta. Another customer had a little left in a jar and mixed it into the apple for an extra special, apple crumble, wonderful! I love to open a jar of Frutta Cotta and tip it out into a serving dish or simply pop a spoon in the jar on the table with a selection of favourite cheeses.
I love a blue cheese to balance the sweetness such as Garstang Blue, a dish of nuts to give a crunch and a bottle of wine to savour all shared with friends. A luxury, ready made dessert to relax & spend time with your friends rather than in the kitchen. Gennaro Contaldo whose wonderful cookbook, 'Passione' was the source and inspiration for Cumbrian Frutta Cotta serves his frutta cotta with mascarpone or whipped cream.
